The application of enzymes in industrial processes has gained some popularity in recent years due to the inherent properties of these biological catalyst. This papers reviews some promising enzymatic applications for the oils and fats industry, and the use of palm oil, palm kernel oil and their products will be highlighted where relevant. enzymic processes for oil extraction, lipid modification and the trasformation of fatty acids are discussed with respect to their potencial and industrial applications.
