| dc.description | For the processing of the bunches in the mills it is necessary to know in a fast and reliable way the quantity of oil in the bunch and its stage of maturity. In such way that the mill may do the necessary adjustments and a feedback process with the agronomic area, to analyze and normalize the fluctuations of the components of the bunch, can be generated. The traditional analysis takes between two and three days. The proposed methodology would allow to have the final result in approximately three hours. The technique is based in a method of selection of bunches in hopper through a chord which allows to extract the minimal number (28) of bunches with significance. After a qualitative evaluation is performed, a sub-sample (6 bunches) is taken from the same group to begin the analysis as such with a small sample equivalent to one bunch. Within the traditional procedure several adjustments were done to avoid the alteration of some values because of the sampling and calculator techniques used. As the extraction of the soxhlet oil is the most expensive and slow stage of the process, it was substituted by the formulation of a mathematical model which allows to calculate the oil content in mesocarp from its humidity. This model varies very little among varieties and ages of the palm, even though it can be easily estimated in each plantation. This mathematical model has found a foundation in parallel works developed in the other zones of the country, which involve different types of genetic material, climatic conditions, and palm age. | dc.description | El trabajo fue planteado con el objetivo de establecer y evaluar una metodología rápida, sencilla y confiable para la determinación de las características físicas y químicas del racimo, como herramienta fundamental en el estudio de la baja extracción de aceite en la zona norte colombiana. Para ello se propuso evaluar la correlación entre el contenido de agua y aceite en el mesocarpio del fruto, con el fin de estimar, en un menor tiempo, el porcentaje aceite por medio de la cuantificación de la humedad. En este análisis se tomaron muestras independientes para frutos externos e internos de las partes basal, central y apical del racimo. El contenido de aceite en base húmeda para los frutos externos, siendo mayor que los internos, no mostró variación alguna para estas secciones, mientras que el fruto interno presentó diferencias significativas en la parte central del racimo. La humedad del mesocarpio presentó un comportamiento totalmente opuesto al aceite, mostrando un mayor contenido de agua en los frutos internos, en especial los de la parte central del racimo. Teniendo en cuenta el alto grado de correlación observado entre la humedad y el aceite, fue posible formular un modelo matemático para calcular el porcentaje aceite en mesocarpio fresco a partir de la humedad y de la posición del fruto en la espiga (externo o interno), con una significancia de p | es-ES |
