Dry fractionation of palm kernel oil and fatty acids for high value-added products

Abstract
Owing to its high content of lauric and myristic acids, palm kernel oil is well known as a suitable feedstock for the production of confectionery fats. Fats of the highest quality and highest melting point resulting after modification are called CBS (cocoa butter substitutes). High quality CBSs offer good flavor release and resistance to fat bloom. The palm kernel oil conversion into CBS is usually done through a combination of fractionation and hydrogenation. The Statolizer® is a highly reliable technology for consistent production (high quality and high yield) of palm kernel stearin IV ? 7, in one step, to be used as a substitute for cocoa butter, after its total hydrogenation. A two-stage process can produce an unhardened, high quality CBS (IV ? 5). Also, the production of stearin can be increased by the successful re-fractionation of palm kernel olein. Three products can be produced through the two-stage static fractionation of palm kernel oil: palm kernel stearin IV ~ 5 (to be used directly as CBS), palm kernel stearin IV ~ 7 (to be used as the CBS after total hydrogenation) and palm kernel olein IV ~ 27. The hardened palm stearin has excellent melting and crystallization properties compared with the traditional fractionated and hydrogenated stearin. Se pueden generar los siguientes tres productos, mediante el fraccionamiento estático de dos etapas del aceite de palmiste: estearina de palmiste IV ~ 5 (para ser utilizada directamente como smc), estearina de palmiste IV ~ 7 (para ser utilizada como SMC luego de su hidrogenación total) y oleína de palmiste IV ~ 27. La estearina de palmiste no endurecida ofrece excelentes propiedades de fusión y cristalización comparadas con la fracturación de estearina tradicional por hidrogenación. La reducción en la capacidad de hidrogenación es probablemente el beneficio más importante del proceso de fraccionamiento estático del aceite de palmiste en dos etapas.
