Abstract
The numerous changes taking place in the production and consumption behavior of palm, soybean, canola, and sunflower vegetable oils impose  many challenges on countries, but only those that manage to anticipate and adapt will be successful in these markets. These changes lead to analyze market situation and opportunities for these products of plant origin, and for this reason the situation of the oils both on a world scale and on the production and consumption in the American continent is presented. Variables such as the supply structure, the demand structure, and trade flows resulting from these dynamics are addressed for both market levels.El propósito de esta presentación es proporcionar una visión general del mercado de aceites en el mundo, con un foco muy específico en el continente americano. Esta exposición se divide en tres partes. En primer lugar, se hace una revisión general sobre la situación y los retos que el mundo tendrá que enfrentar en cuanto a la alimentación. La segunda parte versa sobre un análisis de la situación que guarda el mercado de aceites vegetales en el ámbito mundial, y la tercera, se refiere a la situación de los aceites en el continente americano.
