| dc.description | This study attempts to answer the basic question of whether natural saturated fat is healthy. The paper traces the history of how and when the demonization of saturated fat occurred. The paper also presents a scientific reassessment of 2 landmark studies that were previously used to demonise saturated fat. The Sydney Diet Heart Study (1966-1973) and The Minnesota Coronary Experiment (1968-1973), both reassesments show that the previous conclusions of the studies were errorneous. The paper also quotes good studies which scientifically proved that saturated fats are healthy, namely The Pukapuka and Tokelau Studies (1981) and PURE (Prospective Urban Rural Epidemiology) Study by Dehgan M, et al. Lancet 2017. PURE Study even establishes that adequate saturated fat intake is associated with lower incidence of stroke, among others. Finally, provides scientific evidence that natural saturated fats are healthy and are essential foods and lacking them in the diet may lead to serious consequences like stroke, cancers and dementia. | en-US |
| dc.description | Este trabajo pretende responder a la inquietud básica de si la grasa saturada natural es sana. El artículo hace un recuento histórico de por qué y cuándo se le demonizó. Además, presenta la revaluación científica de dos estudios trascendentales que anteriormente contribuyeron a su desprestigio. El Sydney Diet Heart Study (1966-1973) y el Minnesota Coronary Experiment (1968-1973), muestran que las conclusiones de estos estudios estaban erradas. Así mismo, este trabajo cita investigaciones serias que prueban científicamente que las grasas saturadas son sanas, a saber: los estudios Pukapuka y Tokelau (1981) y el PURE (Epidemiología Prospectiva Urbana y Rural) de Dehgan M. et al., 2017. El estudio PURE, inclusive, señala que la ingesta adecuada de grasas saturadas está asociada con una menor incidencia de derrames. Finalmente, presenta evidencia científica en el sentido de que las grasas satu- radas naturales son sanas y esenciales, y que su deficiencia en la alimentación podría producir graves consecuencias, como derrames, cáncer y demencia.
