dc.descriptionEl aceite de palma es uno de los aceites vegetales más utilizados en la industria alimentaria por su versatilidad, estabilidad y propiedades funcionales, y su perfil de ácidos grasos y contenido de antioxidantes, como la vitamina E, específicamente tocotrienoles, que se asocian con beneficios para la salud. Por lo tanto, en este estudio se cuantificaron los ácidos grasos, tocotrienoles y tocoferoles presentes en mezclas de aceites vegetales comercializados en Colombia que tienen aceite de palma como ingrediente. El análisis del perfil de ácidos grasos mostró que en los aceites evaluados predominan los ácidos grasos insaturados, especialmente oleico (29 %-50 %) y linoleico (10 %-42 %). En relación con el contenido de vitamina E, se evidencia que las muestras de aceite con mayor proporción de oleína de palma en su formulación presentan un incremento en el contenido de tocotrienoles. Asimismo, un análisis de componentes principales permitió diferenciar las muestras de aceite de acuerdo con su composición y zona climática de comercialización. A partir de estos resultados se puede determinar que las mezclas de aceites vegetales comercializadas en Colombia ofrecen un equilibrado perfil de ácidos grasos y son una buena fuente de vitamina E, lo que podría contribuir a la salud cardiovascular y brindar propiedades antiinflamatorias y antioxidantes a los consumidores.es-ES
