Selectivity characterization of lipases for interesterification with a model chiral triglyceride.
Abstract
The interesterification reactions of 2 lipases showing special hydrolytic activities, Carica papaya and Candida antarctica SP435L lipases (respectively, sn3 stereoselective and short chain typoselective through hydrolysis), were studied using a simple and effective system, which allows acyl exchanges to be followed. Both lipases displayed the same selectivities previously observed in hydrolysis experiments. 22 ref.
