dc.descriptionFunctional foods with health-related properties represent one of the fastest growing markets in the developed world. The principal driving force is an increase in nutritional knowledge and the expectations of consumers that food should provide health benefits beyond traditional nutrition. Scientific studies of the function of nutrients often link diet with prevention of disease and potential reduction of risk. These developments have driven food manufacturers to incorporate ingredients that offer health functions, either individually or in combination, into foods and supplements consumed daily. The dietary concerns of an aging population and overload with omega-6 fatty acids have shifted the emphasis from preventing diseases caused by deficiencies to longer-term avoidance of cronic disease. Consumers are becoming more aware of the relationship between diet and health and prefer to modify their diet rather than adopt a pharmaceutical renedy to ensure healthy life. Expanding scientific and clinical research validating the effectiveness and safety of natural health products and fuctional foods, and increasing media coverage of such research, is also contributing to this trend.
