The advantages and disadvantages of the various methods available for harvesting olives for production of virgin olive oil are outlined: hand-picking, mechanical harvesting by shaking, vibrating poles or rocking combs, and harvesting from the ground. The effects of storage conditions, duration of storage and processing methods on oil quality are discussed.
