Abstract
The advantages and disadvantages of the various methods available for harvesting olives for production of virgin olive oil are outlined: hand-picking, mechanical harvesting by shaking, vibrating poles or rocking combs, and harvesting from the ground. The effects of storage conditions, duration of storage and processing methods on oil quality are discussed. 21 ref.
