Abstract
This paper briefly reviews the effects of the consumption of monoenoic fatty acids in olive oil on serum cholesterol, lipoprotein metabolism, oxidation of LDL, blood pressure, blood sugar, digestion, bone growth and mineralization and the preventionof cardiovascular diseases, hypertension, diabetes and cancer.
